{Food | Peaches is the Word}

It is always a treat and a tremendous pleasure to dine at Tutto Fresco in Rancho Santa Margarita while Dan Johns, the executive chef himself, shares his most current culinary confections. I'm always open to trying a variety of dishes ranging in a spectrum of flavors and tastes. This time around, Dan amazed me with his summer ingredient...peaches! The Peaches added a sweetness and acidity that contributed to the overall full flavor of his sweet and savory dishes. With a pinot grigio in hand, I started off with a delectable smoked salmon crostini, reminiscent of a smoked salmon bagel; then a palate refresher of bruschetta al pomodoro on a Parmesan nest; next the perfect summer salad, featuring peaches and blackened shrimp; onto another peach dish, Peach & Pesto Pizza, think Margherita Pizza; and ended with a Macadamia Pesto Rack of Lamb....delizioso! I couldn't have had a better, light (but filling), and refreshing meal on such a warm afternoon; Dan never fails to hit the spot with each authentic Italian dish, utilizing a modern twist on ingredients, and continually pushing the boundaries of food. When in Rome  Rancho Santa Margarita, Tutto Fresco is my go-to resto!
Crostini/Toasted Baguette slices, Goat cheese, Arugula, Salmon, Capers
Palate Refresher/Bruschetta al Pomodoro on a Parmesan Nest
 Salad/Blackened Shrimp, Peaches, Brie, Cranberries, Red Onions on a bed of Arugula and drizzled in a Blueberry Lime Vinaigrette
Pizza/Pesto, Bleu Cheese, Mozzarella, Peaches, Walnuts (for texture), topped with a Basil Leaf
Rack of Lamb/Macadamia Pesto & Rosemary Dijon
