I was so pleased when Keith's grandfather Tom contacted us to dine with him at my fave RSM restaurant, Tutto Fresco Trattoria. The ever so talented executive chef, Dan Johns is always creating out-of-the-box Italian, culinary delights with which he shares with us. During my last visit, the star ingredient was peaches; this time around beets and eggplant! All of these dishes are seasonal, so hurry to indulge before they're off the menu!

Highly Recommend- Eggplant Bites/Fresh eggplant, lightly breaded and fried. Served with Marinara and Siracha (SO GOOD) infused dipping sauces
Roasted Beet & Goat Cheese Pizza (not listed on the menu)/ Beets, Goat Cheese, Mushrooms, Rosemary Dijon, Arrugula, & Truffle Oil
The beets are wrapped in foil, baked in the oven; the skins are taken off and the beets tossed into balsamic reduction. Dan described how the skins of the beets peeled off so effortlessly like that of sweet potatoes. Made me want to eat this pizza all over again; the 'overt sweetness' of the beets was softened by adding 'countering flavors of the pepperness of arrugula', and the 'lemony tarte of the cheese'.
Barramundi/ Grilled New Zealand Sea Bass, buerre blanc sauce, topped with crispy onions, served with mashed potatoes and asparagus.
