New Sushi Takeout Sushi Trends is Available at Costa Mesa Kitchens - Grand Opening Special

New sushi concept, Sushi Trends by Chef Roy has opened at Costa Mesa Kitchens. I was impressed by the expansive menu choices, and got to try a little bit of everything with their limited Grand Opening Sushi Trends Pack. I decided to come in to pick up as I wanted to check out the space - it’s advertised as being a hybrid food hall meets ghost kitchens.

The space is really nicely designed, it has a coastal modern aesthetic. The inside basically features just a main hallway to the back with food “stalls”/counters on each side. To the immediate right when you come in is the pick up area for food delivery app drivers, and if you’re coming in to pick up yourself. But there are also kiosks if you want to order in person (this was a similar concept I saw in the food hall at the Aria Las Vegas Hotel). Anyone who is picking up can go up to smaller, wall mounted tablets that scan your order confirmation QR code, and lockers open up automatically with your order - if it’s not ready the tablet will tell you how much time is needed until your order will be ready.

Overall the sushi tasted fresh, and I liked the carpaccio, and sushi tacos most. I think by the time I got to the sticky rice w/spicy tuna, I had already had too much sticky rice from the sushi sandwiches. The idea with the sushi sandwiches is fun, but I think it might have been sitting for a little while, and would have tasted better if I was eating it immediately after it was prepared. The rolls were refreshing. but not anything spectacular (I’m not a huge fan of the skinny roll since it’s only wrapped in cucumber, but I did like the kick from the hot roll). If you can split with a couple friends or so - it’s fun for sharing, but there’s definitely a ton of different menu items to try.

This was a little bit of a weird experience for me, because I had ordered my Sushi Trends meal through the PR team that set this up (as they were experiencing technical issues with the ordering site), and as instructed, I gave them a specific window that I would be picking up . I drove through an hour of rush hour traffic to ensure I would be there for the pick up window, and still had to wait for another 25-30 minutes. If I had not asked and the attendant wasn’t feeling bad for me, than I probably would have had to wait another 30 minutes. Although this is a new dining concept, I think the order intake could have been better organized and the time/resources needed could have been forecasted more accurately to fulfill these PR orders for the day/weekend, and therefore a different pick up time recommended to me or another solution. I would have just ordered through a food delivery app if I had known there would be such a wait time involved, but my impression was there were grand opening festivities involved (that was not the case) so I wanted to see the place in person. I had a friend who ordered the pack after I shared, and she was able to pick up no problem, so perhaps they have found their stride with fulfilling orders.
